Frog Hollow Farm Market Cafe’s Avocado Toast

Cafe manager / chef Mark Benedetto calls his Avocado Toast a cult classic – and one of the most ordered items at our Frog Hollow Farm Market Cafe in the San Francisco Ferry Building.  All ingredients are sourced directly from the Ferry Building’s market.  We’re excited to share his recipe for our Cafe’s Avocado Toast!

Avocado Toast by Andrew Jepsen

Cut the bread to the desired shape – in the Shop we do quarters, halved.
Brush a light coating of olive oil on the halved bread, and toast face up in the oven.  A higher temperature (425 F) will crisp the surface and leave the interior soft. A lower temperature (350 F) will crisp the bread up throughout.
Halve the avocados, remove the pit, and scoop out of the shell.
Place face down on a cutting board and slice each half into several thin strips.
Remove the bread.  Working quickly to keep the bread warm, gently rub the garlic clove on the toasted bread surface.  Splay out the avocado, and transfer it to the bread with a chef’s knife.
Salt and pepper to taste.  Drizzle with more olive oil.  Serve immediately.

Makes 4 servings, 2 pieces each
