Apple Slaw with Cilantro Crème Fraiche Dressing

Apple Slaw Large

Ingredients

For Chili Salt

1 tbsp of salt

1 dried cayenne

For Slaw

1 Apple, cut into matchsticks

1⁄4 head of green cabbage, thinly sliced, or shaved on a mandolin

1⁄4 head of purple cabbage, thinly sliced, or shaved on a mandolin

1⁄2 a bunch of radishes, thinly sliced or shaved on a mandolin

1⁄4 cup of cilantro, minced

For Dressing

3 tablespoons extra-virgin olive oil

2 tablespoons creme fraiche

1 tablespoon Champagne vinegar

1/2 teaspoon honey

2 teaspoons Dijon mustard

Salt and pepper to taste

Method:

For Chili Salt

Mince one cayenne with 1 tablespoon of salt

For Dressing

Mix ingredients together until well combined

For Slaw

In a large mixing bowl combine the matchstick apples, with the shaved cabbage, the shaved radishes, and the minced cilantro. Season veggies with about one tsp of chili salt and coat them with the crème fraiche dressing. Mix ingredients together until well combined, adjusting seasoning as needed.
