Recipe: Dried Fruit Truffles

 Dried fruit and chocolate truffles

These truffles are a healthy and delicious snack that can be enjoyed by the whole family. They are simple to make and will store in the fridge for a week, and in the freezer for up to a year. The flavor is reminiscent to the Samoa Girl Scout Cookie. I made two versions, one with oats, and one without for our gluten free friends.

 Ingredients:

½ cup dried fruit,chopped

3 dates, pitted and chopped

1/3 cup Almonds, toasted or raw and chopped

1/3 cup hazelnut, toasted or raw and chopped

1/3 cup shaved coconut, and extra for dusting

½ cup almond butter

1/3 cup honey

1oz 100% cacao, shaved (I used Ghirardelli)

1 tsp of vanilla extract

Pinch of salt

You can also add 1/3 cup of raw or toasted oats to this recipe.

 Preparation:

Chop all of the ingredients and then combine them in a bowl. Then add the ingredients to the food processor. If you have a small food processor, split the batch in half. The texture can vary from chunky to smooth as long as the ingredients bind together.

Remove the mix from the food processor and roll into one-inch size balls. Dust them with shaved coconut and place in a container lined with parchment paper. Let the truffles rest in the refrigerator for a couple hours. Enjoy morning, noon, and night!
