Recipe: Grain Free Peach Cobbler

Ingredients

4-5 cups sliced peaches

1 cup coconut sugar

1/2 cup water

1/2 cup butter

4 tablespoons almond flour

1/2 cup coconut flour

1/2 teaspoon baking soda

1/2 teaspoon salt

4 tablespoons melted coconut oil

1 tablespoon honey

2 eggs, beaten

1/3 cup water

Preparation

Preheat oven to 400 degrees F.

Stir together water, sugar and peaches and bring to a boil in a saucepan. Simmer 5-10 minutes, depending on softness of peaches. Set aside.

Place butter in 3 quart baking dish and place in oven to melt. (Just melt, remove before browning.)

Mix almond flour, coconut flour, baking soda, and salt. In separate bowl beat eggs and add melted coconut oil, honey, and water. Pour egg mixture into flour mixture and stir to combine. Dough will be thick and sticky.

Remove baking dish from oven and drop spoonfuls of dough evenly throughout. Spoon peaches evenly on top. DO NOT MIX. Bake for 12-15 minutes or until dough rises, firms, and slightly browns.

Enjoy warm with ice cream or I love it for breakfast the next day!
