I found this recipe by Christine Steendahl aka The Menu Mom and thought it would be perfect for the one lone kiwi in this week’s box (or if you’ve got one left over from last week like I do). When introducing this recipe, she says: “This kid-friendly salsa is an excellent way to attract your child’s appetite away from the routine lunch-time fare. Because this salsa has kiwi as an ingredient, it offers a nice sweet flavor that your youngster may just gravitate toward.” Sounds good to me! It seems like a perfect introduction to salsa without worrying about the spice. It’s a nice easy recipe that kids can help with, too.

Kiwi Salsa for Kids

  • 1 kiwi, peeled and chopped
  • 1 small tomato, seeded and chopped
  • 1T fresh parsley, chopped
  • 1T green onion, diced
  • 1/2t lemon or tangerine juice
Combine kiwi, tomato, parsley and onion in a small bowl. Add the citrus juice and mix until well-coated. Chill and serve! Editor’s note: If you feel adventurous, try adding some avocado (the fuerte’s being slightly sweeter than the hass would be perfect for this) or substitute cilantro for the parsley for more of a kick.
