Recipe: Apricots with Yogurt, Honey, and Toasted Pistachios
Ingredients 1 apricot 4 tablespoons good quality plain yogurt or Greek yogurt, divided Honey (try the honey from our orchard featured as an Add-On!) 1 tablespoon toasted pistachios, unsalted Preparation In a small dry skillet over medium heat, toast the pistachios for about 5 minutes. Chop coarsely and set aside. Cut the apricot in half and remove the pit. Top each half with 2 tablespoons of the yogurt. Drizzle each half with honey and sprinkle on the pistachios. This recipe can easily be doubled, tripled, quadrupled, etc. depending on how many people you are feeding, or on how hungry you are!
