Recipe: Halloumi and Strawberry Salad

Ingredients:

Salad: 1 package of sheep’s milk Halloumi cheese from Cypress. Sliced into desired thickness, sautéed in a non-stick pan until browned 1 basket of Frog Hollow strawberries, sliced into wheels 10 leaves of mint, smaller size 10 leaves of basil, smaller size 1 tbs. of bee pollen kosher salt and freshly ground black pepper to taste Dressing: Zest of a lime or lemon to taste Lime or lemon juice to taste Honey to taste Good quality olive oil to taste Kosher salt and freshly ground black pepper to taste Method: Place salad ingredients on a chilled flat plate. Mix the dressing ingredients in a small bowl and drizzle it on top of the salad. Serve immediately.
