{"id":3220,"date":"2013-09-03T21:05:18","date_gmt":"2013-09-03T21:05:18","guid":{"rendered":"http:\/\/happychildcsa.com\/?p=3220"},"modified":"2013-09-03T21:05:18","modified_gmt":"2013-09-03T21:05:18","slug":"recipe-gluten-free-peach-cornbread-muffins","status":"publish","type":"post","link":"https:\/\/happychildcsa.com\/froghollowCSA\/recipe-gluten-free-peach-cornbread-muffins\/","title":{"rendered":"Recipe: Gluten-Free Peach Cornbread Muffins"},"content":{"rendered":"<h3><span style=\"font-size: 13px; font-weight: normal;\">These hearty and delicious muffins are not too sweet, so they make an awesome breakfast or snack.<\/span><\/h3>\n<h3>Ingredients<\/h3>\n1\/2 cup almond flour Ingredients 1\/2 cup cornmeal (medium grind) 1\/2 cup brown rice flour 1\/2 cup sugar\n\n1 tsp baking powder 1\/2 tsp cinnamon 1\/4 tsp salt 1\/3 cup vegan coconut oil, melted 1 egg\n\n1\/4 cup goat\u2019s milk plain kefir 2 tsp vanilla extract 2 peaches, skinned and chopped with juice\n<h3>Preparation<\/h3>\n1. Preheat oven to 350 degrees.\n\n2. Wash and chop peaches, reserving the juice from them, in a bowl.\n\n3. In a large mixing bowl, combine dry ingredients. In a separate bowl, combine wet ingredients in a separate bowl then add to peaches.\n\n4. Fold wet ingredients into dry ones.\n\n5. Pour into greased muffin molds.\n\n6. Bake for 27 minutes (or until a toothpick comes out clean).\n\n7.
