{"id":3579,"date":"2014-01-14T20:17:42","date_gmt":"2014-01-14T20:17:42","guid":{"rendered":"http:\/\/happychildcsa.com\/?p=3579"},"modified":"2014-01-14T20:17:42","modified_gmt":"2014-01-14T20:17:42","slug":"recipe-roasted-beets-with-oranges","status":"publish","type":"post","link":"https:\/\/happychildcsa.com\/froghollowCSA\/recipe-roasted-beets-with-oranges\/","title":{"rendered":"Recipe: Roasted Beets with Oranges"},"content":{"rendered":"<h4><\/h4>\n<h4>Ingredients<\/h4>\n<span style=\"line-height: 1.5em;\">2 bunches baby red beets, stems removed and scrubbed<\/span>\n\n2 sprigs fresh thyme\n\n2 cloves garlic, crushed\n\n1 shallot, cut in half\n\n1 Tbs extra-virgin olive oil\n\n1 Tbs water\n\nsalt and freshly ground black pepper\n\n2 oranges, segmented (peels reserved for zest if you like)\n\nVinaigrette\n\n1 Tbs balsamic vinegar\n\n1 Tbs orange juice\n\n1 Tbs finely chopped shallot\n\n1 tsp Dijon mustard\n\nzest of 1 orange\n\n2 tablespoons extra-virgin olive oil\n<h4>Preparation<\/h4>\nPreheat the oven to 400F. In a large piece of aluminum foil, make a packet in\u00a0which to place the beets, thyme sprigs, garlic and shallots. Place the packet onto\u00a0a rimmed baking sheet or casserole dish. Pour the water over the beets and then\u00a0drizzle with the olive oil. Salt and pepper everything. Close up the packet, but\u00a0not completely, then roast the beets until they are tender when pierced with a\u00a0paring knife into the center, about half an hour.\n\nWhile the beets roast, peel and segment the oranges. If you\u2019d like the oranges to\u00a0look pretty and to use the peels for zest, use a sharp paring knife to remove the\u00a0peel. Or you could zest one of the oranges first and then use the knife to remove\u00a0the remaining pith. Set the orange segments aside.\n\nIn a medium bowl wisk together the vinegar, orange juice, shallot, mustard, and\u00a0zest. Drizzle in the olive oil while whisking until the vinaigrette is emulsified. Salt and pepper to taste.\n\nRemove the beets from the oven and allow them to cool enough to handle.
