{"id":4249,"date":"2015-01-20T21:35:11","date_gmt":"2015-01-20T21:35:11","guid":{"rendered":"http:\/\/happychildcsa.com\/?p=4249"},"modified":"2015-01-20T21:35:11","modified_gmt":"2015-01-20T21:35:11","slug":"country-apple-baskets","status":"publish","type":"post","link":"https:\/\/happychildcsa.com\/froghollowCSA\/country-apple-baskets\/","title":{"rendered":"Country Apple Baskets"},"content":{"rendered":"<p style=\"text-align: center;\"><a href=\"http:\/\/happychildcsa.com\/froghollowCSA\/wp-content\/uploads\/2015\/01\/country-apple-baskets_web.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" alt=\"country apple baskets_web\" src=\"http:\/\/happychildcsa.com\/froghollowCSA\/wp-content\/uploads\/2015\/01\/country-apple-baskets_web.jpg\" width=\"600\" height=\"398\" \/><\/a><\/p>\n<strong>INGREDIENTS<\/strong>\n\n<strong>Pastry<\/strong>\n\n\u2022 3 3\/4 cups all-purpose flour\n\n\u2022 3 tablespoons sugar \u2022 3\/4 teaspoon salt\n\n\u2022 1 stick plus 7 tablespoons cold unsalted butter, cut in small pieces\n\n<span style=\"line-height: 1.5em;\">\u2022 1 large egg \u2022 <\/span>\n\n<span style=\"line-height: 1.5em;\">1 large egg yolk <\/span>\n\n<span style=\"line-height: 1.5em;\">\u2022 1\/2 cup plus 3 tablespoons ice water<\/span>\n\n<span style=\"line-height: 1.5em;\"> \u2022 6 Golden Delicious apples, cored<\/span>\n\n<span style=\"line-height: 1.5em;\"> \u2022 Three 3-inch cinnamon sticks, broken in half <\/span>\n\n<span style=\"line-height: 1.5em;\">\u2022 1 large egg, beaten with 1 tablespoon of water <\/span>\n\n<strong style=\"line-height: 1.5em;\">Stuffed Apples<\/strong>\n\n<span style=\"line-height: 1.5em;\"> \u2022 10 apples <\/span>\n\n<span style=\"line-height: 1.5em;\">\u2022 1 tbsp of butter, plus 1 tbsp<\/span>\n\n<span style=\"line-height: 1.5em;\"> \u2022 1 tbsp brown sugar<\/span>\n\n<span style=\"line-height: 1.5em;\"> \u2022 1 tsp can sugar<\/span>\n\n<span style=\"line-height: 1.5em;\"> \u2022 1\u20444 tsp cinnamon <\/span>\n\n<span style=\"line-height: 1.5em;\">\u2022 1\/8 tsp clove <\/span>\n\n<span style=\"line-height: 1.5em;\">\u2022 1\/8 tsp nutmeg <\/span>\n\n<span style=\"line-height: 1.5em;\">\u2022 1\/8 tsp ginger <\/span>\n\n<span style=\"line-height: 1.5em;\">\u2022 1\/8 tsp salt<\/span>\n\n<span style=\"line-height: 1.5em;\"> \u2022 Zest of one lemon<\/span>\n\n<span style=\"line-height: 1.5em;\"> \u2022 3\u20444 cup roughly chopped walnuts <\/span>\n\n<strong style=\"line-height: 1.5em;\">METHOD<\/strong>\n\n<em style=\"line-height: 1.5em;\"><strong>For Pastry<\/strong><\/em>\n\n<span style=\"line-height: 1.5em;\">In a large bowl, whisk the flour with the sugar and salt. Using a pastry blender,\u00a0cut in the butter until the mixture resembles coarse meal. In a small bowl, whisk\u00a0the egg with the egg yolk, then whisk in the water. Drizzle the egg over the flourmixture, and stir with a fork to lightly blend the ingredients. Squeeze gently until\u00a0a smooth dough forms. Divide it in half, pat each half into a disk and wrap in\u00a0plastic. Refrigerate until firm, about 1 hour. <\/span>\n\n<span style=\"line-height: 1.5em;\">Preheat the oven to 350\u00b0. On a floured work surface, roll 1 of the pastry disks\u00a0into a rough 9-by-24-inch rectangle about 1\/8 inch thick. Using a plate as a\u00a0guide, cut out three 8-inch rounds. Transfer them to a large baking sheet with\u00a0plastic wrap between them to prevent sticking. Repeat with the remaining pastry\u00a0disk. Cut out leaf decorations from the scraps to use for garnish. Refrigerate\u00a0the rounds and decorations until firm, at least 20 minutes. Remove from the\u00a0refrigerator and let stand until pliable, about 2 minutes. <\/span>\n\n<em style=\"line-height: 1.5em;\"><strong>For Apples<\/strong><\/em>\n\n<span style=\"line-height: 1.5em;\">Cut the tops off of the apples. Use a paring knife to core the apple. With a spoon,\u00a0scoop out the meat of the apple, leaving a 1\u20444 inch edge space. Roughly chop the\u00a0meat of the apple.<\/span>\n\n<span style=\"line-height: 1.5em;\"> Place 1 tbsp of butter in a saut\u00e9 pan and add the apples, sugar, and spices.\u00a0Cook for three minutes at medium heat or until spices coat the apples. Add a\u00a0pinch of salt. <\/span>\n\n<span style=\"line-height: 1.5em;\">Toss apple mixture in a bowl with lemon zest and walnuts. Scoop 1\u20444 tsp of butter\u00a0into each hollowed out apple and top with about 1 1\u20442 tbsp of apple mixture or until\u00a0apple is filled.<\/span>\n\n<span style=\"line-height: 1.5em;\"> Lightly oil a large rimmed baking sheet. Drape a pastry round over each\u00a0apple and wrap the apples without stretching the pastry, tucking it around and\u00a0underneath to form a neat package. Transfer the apples to the baking sheet.Using a small knife, make a hole in the pastry at the top of each apple and press\u00a0the cinnamon sticks on the diagonal through the holes and into the apples,\u00a0creating stems.
