{"id":4612,"date":"2015-10-19T21:20:12","date_gmt":"2015-10-19T21:20:12","guid":{"rendered":"http:\/\/happychildcsa.com\/?p=4612"},"modified":"2016-04-06T13:38:04","modified_gmt":"2016-04-06T13:38:04","slug":"recipe-roast-chicken-with-pears-shallots-and-thyme","status":"publish","type":"post","link":"https:\/\/happychildcsa.com\/froghollowCSA\/recipe-roast-chicken-with-pears-shallots-and-thyme\/","title":{"rendered":"Recipe: Roast Chicken with Pears, Shallots, and Thyme"},"content":{"rendered":"<em>from Martha Stewart<\/em>\r\n<h3><strong>Ingredients <\/strong><\/h3>\r\n1 whole chicken, innards removed\r\n\r\n10 sprigs fresh thyme divided, plus 1 tablespoon leaves\r\n\r\n6 shallots, peeled and cut in half\r\n\r\n3 cloves garlic, unpeeled\r\n\r\n1\/2 lemon, cut in half\r\n\r\n3 Pears\r\n\r\nSalt and Pepper\r\n<h3><strong>Method<\/strong><\/h3>\r\nPreheat your oven to 475 F degrees.\r\n\r\nRinse the chicken inside and out. Pat it dry inside and out with a clean dishtowel.\r\n\r\nPlace the chicken in a dutch oven. Season the bird all over with salt and pepper. Gently lift the skin away from the breasts and season the breasts with salt,pepper, and the thyme leaves. Be sure to recover the breasts with the skin if any\u00a0has come aside. Stuff the cavity of the chicken with the lemon, garlic, and five\u00a0sprigs of thyme. Tie the legs together neatly with some kitchen twine and tuck\u00a0the wings under the legs.\r\n\r\nPlace the chicken in the oven and roast for 15 minutes. While the chicken\u00a0roasts, peel the shallots and cut them in half. Slice the pears in half lengthwise\u00a0and remove the core and stem. Half the halves again.\r\n\r\nRemove the chicken from the oven. If any juices have accumulated, baste the\u00a0chicken. Add the pears, shallots, and remaining thyme to the dutch oven.\r\n\r\nCover with the lid and roast for about 20 minutes. Remove from the oven and\u00a0baste the chicken. Put the bird back in the oven without the lid and roast for\u00a0another 25 minutes or until a thermometer reads 165F when inserted into the\u00a0thickest part of the thigh without touching the bone.\r\n\r\nTransfer the chicken to a carving board and let it rest for ten minutes. While\u00a0the chicken rests, place the dutch oven on the stove top and braise the pears\u00a0and shallots in the accumulated juices for a few minutes.\r\n\r\nCarve the chicken and plate with the pears and shallots.
