{"id":4685,"date":"2016-01-04T19:35:17","date_gmt":"2016-01-04T19:35:17","guid":{"rendered":"http:\/\/happychildcsa.com\/?p=4685"},"modified":"2016-04-06T13:35:14","modified_gmt":"2016-04-06T13:35:14","slug":"glazed-salmon-with-blood-orange-salsa","status":"publish","type":"post","link":"https:\/\/happychildcsa.com\/froghollowCSA\/glazed-salmon-with-blood-orange-salsa\/","title":{"rendered":"Glazed Salmon with Blood Orange Salsa"},"content":{"rendered":"<em>from ecurry.com<\/em>\r\n<h3><strong>Ingredients<\/strong><\/h3>\r\n2 wild salmon fillet\r\n\r\nJuice of 1 small blood orange\r\n\r\n1 blood orange peeled and sliced thick\r\n\r\n1.5 teaspoon grated ginger\r\n\r\nCrushed dried red pepper or red chili flakes\r\n\r\nSalt to taste\r\n\r\n1.5 teaspoon + 1 teaspoon brown sugar\r\n\r\n2 teaspoons stone ground mustard\r\n\r\n1 tablespoon olive oil\r\n\r\n<strong>Salsa:<\/strong>\r\n\r\nBlood orange, peeled and sliced\r\n\r\nScallions, finely chopped\r\n\r\nGrated ginger\r\n\r\nGreen chili pepper, very finely sliced\r\n\r\nFresh cilantro and\/or fresh mint, chopped\r\n\r\nCumin seeds, crushed (use rolling pin)\r\n\r\nSalt and sugar to taste\r\n<h3><strong>Method<\/strong><\/h3>\r\n<strong>To make the salsa<\/strong>, combine all ingredients for the salsa. Adjust salt, sugar and the\u00a0amount of fresh herbs the way you want. Allow it to sit in the refrigerator for a\u00a0few hours for the flavors to infuse and some of the juice to seep out of the oranges\r\n\r\n<strong>To cook the fish,<\/strong>Combine juice, ginger, salt, pepper flakes, mustard and 1 teaspoon brown sugar.\u00a0Whisk and pour it over the fish fillet, toss well to coat and allow it to sit for an\u00a0hour. Or refrigerate overnight.\r\n\r\nToss the other 1.5 teaspoon sugar with the orange slices. Heat oil in a pan large\u00a0enough to hold the fish and the orange slices in a single layer. Place the fish and\u00a0cook over moderate heat for about 5 minutes or until the side turns brown and\u00a0starts to crisp. Flip them over and cook over low heat until the salmon is cooked\u00a0through and flakes easily with a fork. When you flip the fish, place the oranges\u00a0slices in the same pan and cook both sides until they caramelize without turning\u00a0dark brown. The inside should be still juicy and tender.
