Stack\u00a0four or five leaves on top of one another. Roll them into a tight\u00a0cylinder and slice crosswise with a sharp knife, cutting the\u00a0leaves into thin strips. Rinse the leaves in cold water, drain in a\u00a0colander and spin in a salad spinner.\n\nIn a large pot over high heat, bring 3 quarts of water to a boil\u00a0and add 1 teaspoon salt. Add the collards and cook, uncovered,\u00a0for 8 to 10 minutes, until softened.\n\nPrepare a large bowl of ice water to cool the collards.\u00a0Remove the collards from the heat, drain and plunge them into\u00a0the bowl of cold water to stop the cooking and set the color of\u00a0the greens. Drain.\n\nIn a medium saut\u00e9 pan over medium heat, warm the oil. Add\u00a0the garlic and saut\u00e9 for 1 minute. Add the collards, raisins and\u00a01\/2 teaspoon salt. Saut\u00e9 for 3 minutes, stirring frequently.\n\nAdd orange juice and cook for an additional 15 seconds. Do\u00a0not overcook (collards should be bright green).
