With citrus season fully\u00a0underway, it\u2019s marmalade time. Chef\u00a0Becky started making marmalade for\u00a0Frog Hollow ten years ago. It\u2019s her\u00a0favorite fruit preserve. The combination\u00a0of bitter and sweet along with the tangy\u00a0chewiness of the peel are truly divine.\r\n\r\nMost marmalade is made using what\u2019s called the whole fruit method. This\u00a0process is pretty straightforward; cut up the raw fruit, cook it in water and add\u00a0an equal amount of sugar to fruit. But, this process yields a cloudy marmalade,\u00a0which is much less appetizing to the eye. As you\u2019ve probably noticed if you\u2019ve\u00a0ever sampled one of our marmalades, they have a lovely clear jelly with suspended\u00a0pieces of brightly colored, sparkling peel.\r\n\r\nWe accomplish this by using an alternative, and you guessed it, much more\u00a0labor intensive method called the cut fruit method. This means we start by separating the peel from pith. The pith is the white material that lines the inside of\u00a0the peel. This initial process is very time consuming. Then we slice and juice the\u00a0raw oranges and chop the remaining peel. We cook the peel with sugar, juice and\u00a0some water. The pith is cooked separately in a cheesecloth sack. This make it less\u00a0bitter and creates the big chunks of candied peel.\r\n\r\nOur first marmalade was Navel Orange. Since then we\u2019ve expanded our varieties\u00a0to include Meyer Lemon, Blood Orange Strawberry and as of last year, Seville\u00a0and Bergamot. Our Blood Orange, Seville and Bergamot varieties are all limited\u00a0batches, with just a few hundred jars made each season. This week, we\u2019re working\u00a0on a batch of Blood Orange Strawberry. And in the coming weeks, we\u2019ll get to\u00a0work on the Seville and Bergamot varieties.
