Ingredients
1 batch pizza dough, either home made or purchased
1 cup shredded mozzarella cheese
½ cup crumbled blue cheese, divided
2 pears, cored and sliced
½ tablespoon butter
¼ cup toasted walnuts or hazelnuts, coarsely chopped
1/4 cup olive oil
1/4 cup white wine vinegar
1 cloves garlic, minced or pressed
1 small sprig sprig fresh rosemary, chopped
1 tablespoon honey
Preparation
Preheat oven to 450F. Prebake your pizza dough on a cookie sheet or on a pizza stone if you have one for ten minutes or by following package instructions.
To make the vinaigrette, combine the oil, vinegar, honey, garlic, and rosemary and ¼ cup of the blue cheese in a food processor and pulse until combined and creamy.
To prepare the pears, in a non-stick skillet melt the butter, gently sauté the pears for a couple minutes until softened but not mushy. (I’ve made this by just placing the pears on top of the pizza unbuttered and uncooked, and it was delicious too. The butter just makes this extra decadent)
On the prebaked crust, spoon on the vinaigrette then evenly distribute the remaining blue cheese. Layer on top the mozzarella cheese. Arrange the pear slices on top of the cheese and sprinkle on the toasted nuts.
Bake in the preheated oven until the cheese is melted and bubbling all over. Allow to cool a few minutes before slicing and serve.
