Recipe: Roasted Plums

Easy and versatile. Try these oven-roasted plums on top of pancakes with plain yogurt or in a bowl with a dollop of whipped crème fracihe and a sprinkle of brown sugar for dessert. Or, add any of the optional spices and use these plums alongside grilled chicken or pork.

Ingredients
4 plums
2 tablespoons brown sugar
1/2 cup orange juice
1/2 teaspoon cinnamon (optional)
1/8 teaspoon cardamom (optional)
1/8 teaspoon ground cumin (optional)
1/8 teaspoon cayenne (optional)

Preparation

Preheat the oven to 400 degrees F.

With a sharp paring knife, slice the plums in half and remove the pit. In a bowl, whisk together the juice, sugar, and spices if using. Add the plums to the bowl and toss gently to coat evenly.

In an oven proof skillet place the plums cut side up and pour remaining syrup on top. Place the skillet in the oven and bake for about 15-20 minutes until the plums are soft and the juice is bubbly. Remove from the oven and allow to cool slightly.

Either serve immediately or store in a jar for later use.
