Recipe: Beet and Apple Salad

Something fresh and healthy for the New Year!

Ingredients
2 Pink Lady Apples, peeled and cored
2 large beets, peeled
1/4 cup apple juice
2 teaspoons apple cider vinegar
2 tablespoons extra-virgin olive oil
1/4 cup dried currants
Coarse salt
Freshly ground black pepper

Preparation
If you have a food processor with a large grater attachment, you will love this recipe. You can also use a box grater, but it will take some time and energy.

Coarsely grate the apples and beets in the food processor or with the box grater. Place them in a large bowl and set them aside.

In a small saucepan over medium heat, bring the apple juice to boil. Boil until the juice has been reduced to one tablespoon. This should only take a few minutes.

In a small bowl, combine the reduced apple juice and apple cider
vinegar. While whisking, add the olive oil in a steady stream. Season the vinaigrette with salt and pepper.

To the large bowl with the apples and beets, add the vinaigrette and
currants. Toss until well coated. Season with salt and pepper to taste and serve.
