Orange Salad with Cinnamon and Mint

A light and refreshing salad to enjoy the last of the seasons citrus from Tom Hunt’s the Natural Cook.

Ingredients

2 oranges

1/3 cup raw cane sugar or coconut sugar

A few mint leaves

A pinch of ground cinnamon

Preparation

1 Peel the skin and pith from the oranges with a sharp knife, then slice them horizontally into discs about 1/2 inch thick. 2 Sprinkle with the sugar, tear the mint leaves and scatter on top. The mint flavour should be quite subtle, so go easy on the leaves. 3 Sprinkle with the cinnamon – again a little will go far.
