Ingredients
1/2 cup maple syrup
2 cups sunflower seeds
1 cup walnuts, coarsely chopped
1 cup almonds, coarsely chopped
1/4 cup pumpkin seeds
1/2 cup sesame seeds
1/2 cup flax seeds, freshly ground or whole, your choice
2 tsp cinnamon
1/4 tsp salt
1 Orange, zested
Method
1. Preheat the oven to 350 F
2. Place parchment paper on cookie sheet
3. Put half the syrup in a bowl, mix sunflower seeds until well coated
4. Add remaining nuts, seeds, cinnamon, salt, and orange zest
5. Add remainder of syrup and mix well, until all is coated
6. Spred mixture on cookie sheet and bake at 350 for 30 minutes.
7. May appear not to be set but let cool and the brittle will do the work
8. Cool and break into pieces
Packed with protein, essential fatty acids, and minerals this brittle makes for a wonderful power snack.
