Recipe: Peach and Arugula Salad with Creamy Chive Dressing

Fast, Easy, and Delicious.

Ingredients
2 large peaches
6 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice, preferably Meyer, divided
1/3 cup chives, finely chopped
1 1/2 tablespoons heavy cream
12 cups arugula
salt and freshly ground black pepper to taste

Preparation
In a small bowl, whisk 1 1/2 tablespoons of the lemon juice with the olive oil. Whisk in the finely chopped chives and the cream. Salt and pepper to taste.

With a sharp paring knife, cut the peaches in half and remove the pit. Slice thinly and place the slices in a bowl large enough to accomodate the arugula. Sprinkle the peaches with the remaining lemon juice and toss very gently. Add the arugula to the large bowl and then the dressing. Toss everything gently, add more salt and pepper if desired, and serve.
