Recipe: Asian Pear Salad with Maple Lemon Dressing

 

Super simple to prepare and delightful to eat!

Ingredients

1/2 red onion

1/2 cup pecans or walnuts

4 cups salad greens of your choice (baby spinach tastes great)

1 Asian Pear

1/4 cup olive oil

3 tablespoons lemon juice

2 tablespoons Dijon mustard

2 tablespoons Maple syrup

salt and pepper

Preparation

In a small dry skillet toast the nuts over low heat until fragrant and lightly browned. Coarsely chop them and then set aside.

In a small bowl, whisk together the olive oil, lemon juice, mustard and Maple syrup. Salt and pepper to taste.

Slice the onion into thin half moons. Cut the Asian Pear in half and remove the core, and then slice the fruit thinly. Add the washed and dried salad greens, onion, and pear to a salad bowl. Sprinkle on the toasted nuts then toss with the dressing until everything is well coated. Enjoy!
