Recipe: Honey Broiled Peaches with Yogurt

Ingredients:

2 peaches

2 teaspoons butter, divided

half a lemon, juiced

2.5 tablespoons light colored honey

Preparation:

Place the oven racks so your baking dish will sit about 6 inches from the heat.  Preheat the broiler to high.

Cut the peaches in half and remove the pits.  Place them in a shallow baking dish with the flat side up.

In a small bowl combine the lemon juice and the honey.  Place half a teaspoon of butter on top of each peach half and then brush or drizzle the peaches with the lemon honey mixture.

Place the baking dish on the oven rack and broil for about 5-7 minutes until the peaches start turning golden brown and the honey starts to bubble.

Remove the peaches from the oven and serve them with a good quality creamy plain yogurt.  You might consider sprinkling some of our granola on top for an extra special treat!
