Ingredients
1 cup grated apple (about 1 medium to large apple)
3/4 cup flour 1 tablespoon ground flax seeds 4 eggs
1 cup cottage cheese
1 tablespoon honey
1/3 cup chopped walnuts
1/2 teaspoon salt
1/2 teaspoon cinnamon
As desired:
maple syrup
sour cream
cooked black beans
Preparation
Separate the egg yolks from the whites.
In a medium bowl combine egg yolks, flour, cottage cheese, honey, salt, cinnamon, nuts, and grated apple.
Beat the egg whites until they are stiff and then fold them into the bowl with the other ingredients.
Heat a griddle or large skillet over medium high heat. Add butter to the skillet and spread it out. Spoon batter onto skillet and cook until bubbles form and burst on the top side. Then flip the cakes. Cook for another two or so minutes until golden brown.
Top pancakes with maple syrup and sour cream and serve with a side of black beans.
