Recipe: Couscous with Apricots and Mint

Ingredients
4 apricots
½ cucumber
3 tablespoons fresh mint, chopped
juice of ½ a lemon
3 tablespoons olive oil
2 teaspoons honey
½ teaspoon cumin seeds, toasted then ground
1 cup couscous
1 1/3 cups water

Preparation

Bring water, honey, oil and cumin to a boil in a small saucepan. Stir in the couscous. Remove the pan from the heat immediately and cover. Set it aside for five minutes. Meanwhile, slice the cucumber in half lengthwise and remove the seeds. Slice each half lengthwise again and chop into a dice. Remove the pits from the apricots and cut into pieces roughly the same size as the cucumbers.

Remove the lid from the couscous and fluff it with a fork. Transfer couscous to a bowl and stir in the cucumbers, mint, lemon juice and apricots. Enjoy warm or chilled.
