Recipe: Little Gems with Oranges and Sunflower Seeds

Ingredients

4 Little Gem Lettuce Heads 2 Navel Oranges

1/3 cup FHF extra virgin olive oil

2 tablespoons orange juice

2 tablespoons balsamic vinegar salt and fresh ground pepper

1⁄4 cup sunflower seeds, toasted

Preparation

Wash, spin, and break apart the little gems into bite size pieces.

In a small bowl whisk together the olive oil, vinegar, orange juice, salt and pepper.

On a cutting board, slice off the top and bottom of the orange so that it can stand upright. Cut away the peel and as much of the pith as possible. Supreme the orange by cutting along both sides of each section of the orange, releasing the flesh from the membrane. Do this over a bowl so you can collect any juice. Discard seeds.

Place greens, orange sections, and toasted seeds in a bowl and toss gently with the dressing. Serve and enjoy!
