Recipe: Rainbow Red Cabbage Salad

Ingredients:

1 cup thinly sliced or shredded red cabbage (a mandoline works wonderfully for this)
1/2 cup shredded carrots
1/2 cup shredded broccoli stems
1 apple cut into matchsticks
Juice of 2 limes
2 tablespoons olive oil
Sea salt and black pepper

 

Preparation: 

In a large mixing bowl, combine the cabbage, carrots, broccoli stems, and apples. Top the vegetabale mixture with the oil, lime juice and salt and pepper. Toss to coat with the dressing and serve.
