2 large stalks celery
2 Asian pears
1/4 cup finely chopped fresh cilantro leaves
2 green onions (scallions), thinly sliced
1/2 inch piece of fresh ginger, finely grated
2 Tbsp. fresh lime juice
2 Tbsp. rice vinegar
1/4 teaspoon finely chopped Thai red pepper (optional)
In a small bowl, whisk together the rice vinegar, lime juice and optional red pepper.
Using a Julienne tool, slice the Asian pears and celery into fine ribbons. If you don’t have a Julienne tool, use a sharp knife and cut into matchsticks or use a mandoline to slice thinly. Add the Asian pears and celery to a medium bowl along with the rest of the ingredients. Toss gently with the lime juice and rice vinegar and enjoy!
